ABT’s (Atomic Buffalo Appetizers)

12 jalapeno peppers
1 package cream cheese
½ cup leftover shredded bbq chicken, pork or beef
¼ cup leftover shredded bbq chicken, pork or beef reserved
½ cup shredded cheddar cheese (or substitute as you wish)
2 TBL honey
½ cup your favorite bbq rub
12 slices bacon
Toothpicks

Cut off the top of the peppers and hollow out using a small spoon, skewer or anything that will fit inside the pepper.
Mix package of softened cream cheese with shredded cheddar, leftover bbq meat, honey and half of your bbq rub.
Using a small spoon fill each jalapeno pepper with the cream cheese mixture and using the reserved leftover bbq meat push a last piece of meat into the top of pepper to secure cream cheese mixture (this helps prevent the cheese from leaking out when cooking).
Wrap each pepper in one slice of bacon and secure with toothpick as necessary.
Sprinkle bacon wrapped pepper with the remaining rub.
Prepare grill for indirect cooking. Place each bacon wrapped stuffed pepper on cool side of grill and cook until bacon is crisp.

Serve with sour cream, blue cheese dressing or your favorite dipping sauce.
