Grilled Asparagus wrapped in Prosciutto
1 lb asparagus cleaned and trimmed
12 slices prosciutto
1 pkg garlic & fine herb boursin cheese
2 tbsp extra virgin olive oil
1 tsp salt
1 tsp freshly cracked black pepper
In a medium sized bowl toss asparagus, olive oil, salt & pepper. Set aside. Lay the slices of prosciutto onto a baking tray. Using a butter knife or offset spatula spread a thin layer of the boursin on each slice.
Grill the asparagus directly turning frequently until tender and lightly charred. Remove from grill. Wrap each spear with a slice of the prosciutto. Serve warm or cold.
