Grilled Tilapia Fish Tacos with Slaw

Ingredients:

4 Tilapia Filets (approx 2 lbs)

1 tsp Kosher Salt

1 tsp Black Pepper

Louisiana Hot sauce (to taste)

¼ cup canola oil

2 limes

8 corn tortillas

Coat the tilapia generously with the canola oil. Sprinkle on salt & pepper.  Juice half a lime on each filet. Oil the grates on the grill at least 4 times t ensure the fish will not stick. Place filets on a medium high grill turning every 4 minutes until slightly firm to the touch and opaque.  Sprinkle with hot sauce. Set aside lightly tented with foil.  Brush the corn tortillas lightly with oil.  Grill each side of the tortilla on high for a minute. Remove and set aside.

Mango Slaw

Ingredients:

2 whole mangos julienned
1 sm red onion finely minced
½ cup cilantro finely chopped
½ cup Greek Style Yogurt
¼ cup fresh mint finely chopped
Salt & pepper to taste
Mix all of the slaw ingredients in a bowl together adding salt & pepper to taste.  Assemble each taco with flakes of the grilled tilapia, and slaw adding additional lime juice and cilantro if desired. Serve warm with additional sections of lime. .
