Marinated Skirt Steak
2 lbs Beef Skirt steak membrane removed
Marinade ½ cup canola oil 1/3 cup reduced salt soy sauce 3 spring onions 4 large cloves garlic ¼ cup apple cider vinegar ½ tsp ground chipotle ½ tsp ground cumin 2 tbsp brown sugar In a medium bowl, whisk together the marinade ingredients. Place steaks in the marinade and refrigerate for a minimum of 4 hours or overnight. Remove skirt steak from marinade. Prepare your Basques Hardwood Charcoal for a very heat temperature in two zone (hot and cold). Grill skirt steak directly for 2-3 minutes per side. Remove and tent lightly with foil for 10 minutes. Slice across the grain. The hand test is used to estimate the temperature of charcoal when grilling. Hold your hand 4 inches above the coals. If you can hold it there for five seconds before the heat forces you to pull it away, the coals are at medium-low heat. Four seconds equals medium heat, three seconds equals medium-hot heat and two seconds means the coals are at high heat. |
