Poor Man’s Filet Mignon
1 approx. 2 lb pork tenderloin
8 slices bacon Your favorite bbq rub (see below for ours) 8 toothpicks Slice tenderloin into even sections (approx 1.5” thick) Wrap each round with a slice of bacon and secure with toothpick. Sprinkle rub on all sides of bacon wrapped pork round. Prepare grill for indirect cooking. Place each round on direct heat side of grill, flip after 3 min and move pork rounds to cool side of grill. Continue cooking until pork reaches an internal temperature of 160F and bacon is crisp. Remove toothpick and enjoy! Rub 4 TBL brown sugar 1 tsp salt 1 TBL paprika ˝ tsp garlic powder ˝ tsp onion powder ˝ tsp cumin ˝ tsp black pepper ˝ tsp chili powder |
